August is here and if you’re kids aren’t back to school yet, they soon will be. The first day for my kids is August 24 and that means I need to start gathering ideas for school lunches. Being voracious eaters, I need to provide something hearty, healthy and delicious. It’s not always an easy task, especially when you have two children whose taste differ vastly.
I let them buy lunches at school one year and quickly realized that it’s not the healthy option for kids. There isn’t enough healthy options for our growing children. When they can pick a fruit, but not have to pick a veg, or when that veg is corn (which btw is a starch), it soon becomes clear that our children’s nutritional intake is put at risk. The day my son came home telling me he ate two dinner rolls and a go-gurt, was one of the last days they bought school lunches.
But that meant trying to find ideas to satisfy them and giving them things they actually want to eat! It proved a little harder than I thought, but as long as I seemed to keep with a Taco Tuesday and a Pizza Friday theme, everything else was great. They’re favorite? Homemade lunchables! Super quick to throw together in the mornings and I know they’ll eat it.

School Lunch Hacks:
My personal favorite hack is for apple slices. The prepackaged ones can get pretty expensive. Cut down on cost by buying whole apples and ready for it? Salt! Use 1/2 tsp kosher salt per cup of water and let the cut apples soak for 10 minutes. Then just rinse them off, pat them dry and pack them in your kids lunch. The apples will be perfect come lunch time!
