Two simple ingredients, Cauliflower and salt, create the perfect low carb option. Just 5 little grams per cup of cauliflower rice makes it perfect for those following a Keto lifestyle.
1 head cauliflower
1/2 tsp salt
Divide the cauliflower into 4 pieces and remove the thick core.
Using either a box grater or the grating blade in a food processor to shred the cauliflower into ‘rice’
Place into a lint-free towel lined bowl and sprinkle with salt, tossing to combine.
Let sit for 10 minutes before gathering the towel together and squeezing out any liquid that has accumulated.
Use any place you’d use rice by heating through in a saute pan or in the microwave.
If not serving right away, skip the salt and store in an airtight container for up to a couple days.
