Making cauliflower rice is super simple and is a great way to reduce your carb intake while still enjoying all your favorite dishes. It’s perfect for those who follow the Keto diet as one cup of cauliflower rice has only 5 grams of carbs. It’s also much lower in calories and adds more vegetables into your diet.
To make cauliflower rice, all you need is a head of cauliflower. The size doesn’t necessarily matter and only depends on how much ‘rice’ you want to make. Having friends over for super? Just grab a large head of cauliflower. Just you? A small head will do.
It starts by cutting the cauliflower into four parts and discarding the thick, tough core. To make the cauliflower ‘rice,’ simple grate the pieces on the side of a box grater, the same side you would use to grate cheese. You can also use the shredding plate on your food processor.
If using the cauliflower rice right away, toss it with 1/2 of salt and place everything into a lint-free lined bowl, allowing it to sit for 10 minutes. Gather the ends of the towel and give it a twist to squeeze out the water. The rice can be quickly warmed up in the microwave or in a non-stick skillet.

1 head cauliflower
1/2 tsp salt
Divide the cauliflower into 4 pieces and remove the thick core.
Using either a box grater or the grating blade in a food processor to shred the cauliflower into ‘rice’
Place into a lint-free towel lined bowl and sprinkle with salt, tossing to combine.
Let sit for 10 minutes before gathering the towel together and squeezing out any liquid that has accumulated.
Use any place you’d use rice by heating through in a saute pan or in the microwave.
If not serving right away, skip the salt and store in an airtight container for up to a couple days.
