2018 has started! A new year often means big changes for many of us and the most common resolutions are to stay healthy and lose weight. You can do both with this easy, healthy, packed with protein quinoa breakfast bowls.
I’ve never been a fan of oatmeal, even though I do enjoy some overnight oats, but quinoa is a whole other story. The quinoa is made ahead a stored in the fridge which makes this breakfast bowl a snap to put together in the morning. Simply add the quinoa and almond milk to your favorite bowl and pop it in the microwave. In less than 2 minutes (depending on your microwave), you’ll have a hot and steamy breakfast begging for some fresh berries and your favorite nuts.
This breakfast bowl is packed with over 10 grams of protein and the quinoa helps to keep you full until lunchtime. It’s also both gluten-free and dairy-free making it a great choice for those with certain food allergies.
Quinoa breakfast bowls are easily customizable too. If you’re completely vegan, skip the honey and use maple syrup. Not a fan of pecans? Try some almonds or hazelnuts. Add a sprinkle of ground cinnamon for a boost of flavor. Cutting out sugar altogether? Skip the honey or maple syrup entirely and enjoy the natural sweetness of the antioxidant-rich berries.
Who says breakfast bowls have to be boring!

3/4 c cooked quinoa
1/2 c unsweetened almond milk
1 c fresh berries
1/4 c favorite nuts
1 tbs honey or maple syrup
Place the quinoa and almond milk into a bowl and microwave for about 2 minutes or until hot.
Add in the berries and nuts.
Drizzle with honey or stir in some maple syrup
